Today is one of several eat too much days through the year. Gotta have certain things(for the record:we’re having hamburgers, potato salad, a green salad, corn on the cob and watermelon.And brownies and a pie for dessert!)

I made the potato salad(the recipe says to make it the day before because it has a vinaigrette that’s better if it marinates overnight.and(IMO) gets better after a few days(it’s not like potato salad with mayo which you have to eat fairly quickly because it goes bad within a day or so. I’ve been buying potato salad at the grocery store wand one of the things I like about is it’s the perfect size for one person. Stater Brothers makes several different kinds of salads and what I’ve had, I like.When it comes to potato salad, I am a fan. Potato salad is such a subjective thing, too. My sister-in-law does not rate herself as a cook but OMG is her potato salad(a family recipe I believe) is THE BEST.

The funnest part is making the vinaigrette.All you need is all of the ingredients(der) and a large spaghetti sauce jar.Throw in the jar and shake(cover with a kitchen towel and do so over the sink, just to be on the safe side.Hasn’t failed yet.)

Last night we I made egg salad. My egg salad is the perfect combination of:
Eggs(obviously)
Mayo
Parsley
Dijon mustard

As well as REALLY good bread from Panera(and I have a story from that which is going to be saved for a RTBTCKI post.)
